A premium Japanese sushi restaurant in Kuala Lumpur is hiring a Tempura & Washoku Assistant Chef at Commis 3 level and above — supporting the Tempura Master with authentic tempura frying, traditional Washoku dishes and the day-to-day running of the kitchen. Salary starts from RM2,500, depending on experience. Senior-level experience is not required.
You’ll bring
- Some experience in a Japanese or professional kitchen (Commis 3 level and above)
- Experience with deep-frying or a dedicated tempura section is a major plus
- Basic to intermediate Japanese knife skills and an understanding of Washoku flavours
- High attention to detail and the ability to work efficiently under pressure in a hot kitchen
- A strong willingness to learn from senior chefs (Itamae)
- A culinary arts certificate is preferred, but relevant kitchen experience is accepted
What you’ll do
- Prepare tempura batter and control frying temperatures for a light, crispy finish
- Clean, portion and score seafood and seasonal vegetables
- Prepare dashi, sauces and side dishes for the Washoku menu
- Plate dishes to authentic Japanese presentation standards
- Keep the station clean, manage frying oil and monitor stock (FIFO)
