Lead sushi and Asian cuisine in Viking’s World Café, preparing and presenting sushi to STAR standards and managing the sushi section and its team.
Key responsibilities
- Prepare sushi and Asian dishes daily, filleting fish and keeping the sushi case and guest orders flowing
- Manage chiller rotations to keep produce fresh and minimise waste
- Contribute to menu planning and new sushi recipes, meeting weight, measurement and public-health requirements
- Oversee the service line at your section and prepare show plates, tastings and recipe trials
- Prepare requisitions, countercheck deliveries and monitor your section’s working hours
- Lead and train your section team, running the daily reunion and MLC compliance
You’ll bring
- Minimum 6 years’ culinary experience, including time as a Chef de Partie / sushi chef or similar in a 4/5-star hotel or restaurant; extensive European culinary training; cruise experience an advantage
- In-depth Asian cooking methods and strong sushi knife skills
- Proven leadership of multicultural kitchen teams
- Fluent English and strong food-safety knowledge
- Aged 24 or above, physically fit, able to handle 30 kg and work long galley shifts
